  • This light, easy Belarusian dish — known as "Minsk-style kholodnik" — is a bit like our cold sorrel soup, though it has its own quirks. Be sure to try it when you get the chance; it's pleasantly fresh-tasting and takes hardly any time, which busy cooks juggling work and home will appreciate. Boil the beets as usual, in their skins with a splash of vinegar added. Set them aside to cool, and strain the cooking liquid through cheesecloth. Peel the beets and chop them or grate them on the large holes of a box grater. Rinse the sorrel well and cut it however you like (usually into half-inch / one-centimeter strips), then cook it in meat or chicken broth until tender (water works in place of broth). Once the sorrel is done, set the pot aside to cool. Finely chop the green onion and mash it together with the boiled yolks and some salt. Dice the fresh cucumbers and the egg whites, and add them with the onion to the broth with sorrel. Stir in the beets, the beet cooking liquid, and the kefir whisked with a little sugar. Sprinkle the finely chopped dill over each bowl at serving time.
