Cooking method
- Mors is a drink made by diluting berry juice with water and sweetening it with sugar. Our ancestors used it to quench their thirst, right alongside compote and kvass. Here's my recipe for a delicious, healthy lingonberry mors. First, I sort and wash the lingonberries. Then I crush the berries and squeeze out the juice, pour it into a jar, cover it, and set it in a cool, dark place. I cover what's left of the berries with hot water and put it on the stove. I bring it to a boil, take it off the heat, and strain it. Once the liquid has cooled a little, I mix in the reserved lingonberry juice, add sugar, and stir well. Sometimes I make lingonberry mors a little differently: I crush the berries with a wooden pestle, cover them with granulated sugar, and let them sit for 2 to 3 hours. I pour off the syrup that forms into a separate container and put it somewhere cool. I cover the leftover crushed berries with water and boil them for 5 to 7 minutes. I take the liquid off the heat, strain it, and stir in the reserved syrup and the citric acid. Mix everything together and serve chilled.
