  • These quantities make far more than a single pot of broth — unless you're feeding a family of eight or more. The beauty of a base broth like this is that you can pull it out whenever a recipe calls for it. Keep it in the fridge, but not too long, since unfinished broth can sour; about three days is fine. Cut the meat into pieces and chop the bones into smaller chunks. Wash all the vegetables and roots well and slice them, except the onions and garlic, which go in whole. Spread the bones and onions on a hot baking sheet and roast in the oven at about 425°F (220°C). This takes around an hour, maybe an hour and twenty minutes. Transfer the roasted bones and onions to a large pot, add the meat, and pour in the water (about 4.5 quarts/liters). Bring it to a boil, then add a cup of cold water and be sure to skim off the foam that rises. Scrape the rendered fat off the baking sheet, dilute it with a cup of water, bring it to a boil in a separate small pot, then strain it into the broth. Add all the prepared vegetables and roots and simmer over very low heat for about three hours. Strain the broth, pour it into jars (the handiest way to store it), cover with a linen cloth so it can breathe, let it cool, and refrigerate.
