An excellent and not at all difficult to execute culinary recipe I found on the Internet for quite a long time. It is called "Ukrainian solyanka", it differs from others by the constant presence in the recipe of lard (what Ukrainian food does without it, tell me), as well as veal kidneys. Capers, if desired, can be easily replaced with olives, personally I like olives more, so I cooked soup with them.
Cut the fat into cubes, throw it into a deep frying pan along with finely chopped onions, fry well. Garlic is rubbed on a fine grater or pressed through a garlic press. All meat products are cut into small pieces (I like to cut into thin strips) and sent to the frying pan with onions and garlic. Season with tomato paste, pepper, add cucumber cubes and simmer for five minutes. Add half a cup of broth, simmer for another five minutes. Now you need to add salt, be sure to try it, so as not to over-salt. Pour our soup into a saucepan, add more broth, if necessary. When the hodgepodge is quite in time, we lower capers, a few slices of lemon and fresh chopped greens into it. Sour cream is placed in each plate as desired.
