Old Russian-Style Meat Solyanka

- First, make a broth from the beef along with some root vegetables (parsley root, celery root, or whatever you like). Strain it, then add the beef cut into small pieces along with all the other meats you've gathered for the recipe — chicken, goose, or veal (better browned first), plus sausages, ham, and franks. In butter, sauté the finely chopped onion until golden, stir in the flour, fry it briefly, and thin it with a little broth. Now add the pickles, both kinds of olives, capers, and mushrooms — all diced (if using fresh mushrooms, boil them first). Pour in the pickle brine and add the shredded cabbage, blanched well with boiling water. Simmer until tender, then add it all to the pot with the meat. With this recipe, stir the sour cream right into the finished soup and add the fresh herbs to each bowl. It's an exceptionally tasty soup — perfect for lingering, heart-to-heart conversation.
