  • A simple pickle soup with chicken, just right for everyday family dinners. It takes very little time, since the giblets cook quickly, and the result is wonderfully tasty with a pleasant tang — exactly what sets rassolnik apart from other soups. Rinse the chicken giblets well under running water, chop them small, and put them in a pot with boiling water (about 1½ quarts). Cook until fully done, about forty minutes. Note that there's no potato in this recipe; instead, add the chopped root vegetables, carrot, and well-rinsed rice to the pot. While the rice is still half-cooked, add the finely chopped onion and leek. Season with salt and pepper, drop in the bay leaf, and finish cooking the rice. Meanwhile, peel and dice the pickles and gently sauté them in butter for about ten minutes. Add the pickles to the soup and let it simmer another three minutes. Only then stir in the garlic, mashed with salt, and the chopped herbs. Serve the finished soup with a dollop of sour cream, as usual.
