- A spectacular recipe for Moscow-style solyanka, made with choice cuts of fish — one for true food lovers who appreciate an elegant dish, even if solyanka is, by definition, a "mixed" soup thrown together from a bit of everything. Not everyone can splurge on fish this fancy, so feel free to swap in other types — just be sure to use three kinds. Put the butter in the bottom of the pot, add the chopped onion, and fry it well. Stir in the flour, then slowly pour in the fish broth along with the pickle brine. Bring it all to a boil and add the finely chopped mushrooms, olives, and capers, drop in the bay leaf, season with pepper, and bring back to a boil. Add the fish — cut into pieces and pre-boiled — along with the peeled, sliced pickles that you've sautéed with tomato paste in oil. Simmer over very low heat until done. The finished soup should have a pleasant fishy aroma, be both tangy and zesty, and take on a soft orange color. Ladle it into bowls and finish each with a slice of lemon, a few black olives, and fresh herbs. In old aristocratic households this solyanka was served with rasstegai (open-topped fish pies).
