Apple Chutney

A spicy "jam" straight from the heat of India — give it a try! I learned this recipe from a real Indian cook; chutneys are Indian condiments that play up the flavor of the main dish.

  • To make this spicy, fragrant chutney (call it a jam or a dessert if you like), wash the apples, peel them, and cut them into small cubes. Heat the butter in a skillet and add the anise, cinnamon sticks, chopped chili, ginger, and cloves. Stir constantly for 1 minute! Then add the turmeric and the apple cubes and turn the heat down to just below medium. Stir until the apples turn golden. Add the water, cover, and cook for about 10–15 minutes. Once the apples are soft, you can mash them further into a purée, though I personally like to keep some pieces. Finally, stir in the honey and a pinch of salt; a couple of minutes later you'll catch the "all-aboard" whistle — it's DONE! Take it off the heat and be sure to fish out the cinnamon sticks. I served the chutney to my guests with sesame flatbread. Chutney is pleasantly sweet, yet there's no sugar in it at all — pure magic!
