Cold Beet Soup (Svekolnik)

    The ingredients. Let's welcome the coming summer with a big pot of cold beet soup waiting in the fridge — it quenches your thirst beautifully and cools you down in the summer heat.

    Rinse the beets thoroughly under running water.

    Trim off the greens and put the beets on to cook — half an hour is plenty. As they cook, squeeze in half a lemon; the beets really need that juice. Take the finished cooking liquid off the stove, salt it while it's hot, and add a spoonful of sugar. Lift out the beets and let them cool.

    Meanwhile, boil a couple of eggs and cut the cucumbers and radishes into thin strips.

    Peel the cooled beets and grate them on the fine side of a box grater. Do the same with the hard-boiled eggs.

    Combine all the ingredients in the beet cooking liquid and taste.
