Cold Beet Soup (Svekolnik)
A great recipe for a refreshing summer first course — highly recommended! Still shudder remembering the summer heat — those days when you couldn't face anything hot or meaty and just wanted to drink? Here's a simple, no-fuss recipe that gets me through the hot weather every year. It'll do the same for you.
Cooking method
-
Step 1:
The ingredients. Let's welcome the coming summer with a big pot of cold beet soup waiting in the fridge — it quenches your thirst beautifully and cools you down in the summer heat.
-
Step 2:
Rinse the beets thoroughly under running water.
-
Step 3:
Trim off the greens and put the beets on to cook — half an hour is plenty. As they cook, squeeze in half a lemon; the beets really need that juice. Take the finished cooking liquid off the stove, salt it while it's hot, and add a spoonful of sugar. Lift out the beets and let them cool.
-
Step 4:
Meanwhile, boil a couple of eggs and cut the cucumbers and radishes into thin strips.
-
Step 5:
Peel the cooled beets and grate them on the fine side of a box grater. Do the same with the hard-boiled eggs.
-
Step 6:
Season with salt.
-
Step 7:
Combine all the ingredients in the beet cooking liquid and taste.
-
Step 8:
Something missing?
-
Step 9:
Mix everything together.
-
Step 10:
Add the parsley, green onion, and finely chopped dill.
-
Step 11:
Now there's just a little left to do — perfect the flavor with salt and lemon juice.
-
Step 12:
Then chill it in the fridge until your heat-weary family gets home — that's when you'll really make their day. You can finish the cold beet soup with a dollop of fresh sour cream or mayonnaise.
- And just think how many vitamins this cold beet soup packs! Picture coming home from the market with a whole bag of fresh herbs, juicy young beets, cucumbers, and radishes...
