Homemade Rassolnik (Pickle Soup)

There are many versions of rassolnik—the beef can be swapped for pork, veal brisket, lamb, chicken giblets, kidneys, beef heart, even fish or dried mushrooms.
Homemade rassolnik calls for pickled cucumbers, cucumber brine, and root vegetables. In Siberia and beyond the Urals, this soup is more often made with salted milk-cap mushrooms than with pickled cucumbers.
