    Get the ingredients ready. Wash the fruit and greens.

    Halve the cherries and remove the pits. Peel the oranges and cut out the segments with a thin knife, freeing them from the membranes.

    Arrange the arugula leaves, orange segments, cherries, and cheese on a platter.

    Make the dressing: in a small bowl, mix the orange and lemon juice, add a little salt, stir, pour in the oil, and stir again. Drizzle the dressing over the salad without tossing, and give it a light grind of pepper.

    Sprinkle pine nuts on top (you can lightly toast them in a dry pan if you like; I prefer them raw). You can swap the pine nuts for sesame seeds or sunflower seeds, but the taste will change.

    The salad looks prettier made and served in individual portions. Serve it right away, though it's fine if it sits in the refrigerator for a bit. Enjoy!

  • Depending on the season, you can swap the cherries for grapes. You can also add finely chopped sweet red (Yalta) onion and pomegranate seeds — it'll be just as delicious and beautiful.
