- When I make solyanka, I always go by eye. I look at how thick the soup is and add whatever I feel it needs. This recipe serves a family of 4 to 6 or a small group of friends. This classic solyanka takes a little longer than some, because you have to boil the veal and beef tongue first. Here's how to make it: cut all the meats into small pieces and add them to the meat broth. Now slice the pickles (no need to peel them). Sauté them in butter for a couple of minutes, then add the tomato paste and cook over low heat for about 6 minutes. Add this mixture to the solyanka. Sauté the finely chopped onion in butter and add it to the pot with the meats. Pour in the pickle brine. Taste and add salt if needed. Keep cooking the solyanka until it comes to a boil. Once it boils, add all the spices and hold it on low heat for another 2 minutes. Then turn off the heat and let the soup rest for about 20 minutes. To serve, add to each bowl: a slice of lemon, a few black olives cut into quarters, fresh herbs, and a spoonful of sour cream. And now you know how to make solyanka.
