When I make a hodgepodge, I always put everything "on the eye". I look at the thickness of the soup and add what, in my opinion, it lacks. This recipe is designed for a family of 4-6 people in a small group of friends. Such a classic hodgepodge is prepared a little longer than the other, because for it you need to boil veal and beef tongue.
Next, how to cook a hodgepodge:
After we cut all the meat ingredients into small pieces and put everything in meat broth. Now we cut the pickles, which are not necessary to peel from the skin. Fry for two minutes in butter, then add tomato paste and fry over low heat for about six minutes. Then we put the roast in a hodgepodge. Fry finely chopped onion in butter and send it to the meat in a saucepan.
After we pour in cucumber brine. We taste it and, if necessary, salt it. We continue to cook the hodgepodge until the soup boils. When it boils, add all the spices and keep it on low heat for another two minutes. After that, turn off the fire and let the soup brew for about twenty minutes.
When serving, add to each plate: a slice of lemon, a few black olives, cut into 4 parts, fresh herbs and a spoonful of sour cream.Now you already know how to cook a hodgepodge.
