  • To make candied apples, take fresh apples, peel them, and slice them however you like best. Then blanch them: first drop the apples into boiling water for 10 minutes, then plunge them straight into cold water. Make a syrup from the water the apples were blanched in by adding the sugar and letting it dissolve in the hot water. Pour this syrup over the apples and let them sit for a few hours. After about 4 hours, set the pot of apples over low heat and cook for 10 minutes. Take it off the heat and let it stand for 8 hours. Cook again briefly (6–7 minutes) and let it stand for another 5 hours. Repeat this several times until the apples turn translucent. It's a fussy process, but the result is worth it. To speed it up, you can shorten the resting time to 3 hours. Then spread the slices on a baking sheet and dry them in the oven for 15–20 minutes at 300°F (150°C) with the door ajar. If you like, after the first 10 minutes of drying, sprinkle the candied apples with sugar and return them to the oven. And that's it — the candied apples are ready!
