Korean-Style Chicken Salad with Sesame and Cucumber

A wonderfully tasty salad that leaves you refreshed and in a good mood! I've made this more than once for a candlelit dinner — it's delicious and looks beautiful on the plate. The recipe is simple, so make it and treat the people you love!

    1. Poach the chicken breast in lightly salted water, then let it cool and shred it into strands. 2. Rinse the cucumbers and cut them into matchsticks. 3. In a separate bowl, make the dressing: combine the soy sauce with the olive oil, add the vinegar and sugar, stir in the finely minced garlic, season with salt and pepper, and mix. Rinse the parsley, chop it as fine as you can, and add it to the dressing. 4. In a salad bowl, combine the shredded chicken with the cucumbers, pour over the dressing, and refrigerate for 60 minutes. 5. Meanwhile, crack the egg into a small bowl, add a pinch of salt and the finely chopped parsley. Whisk it, then pour it into a hot skillet greased with olive oil. Cook a thin omelet on both sides (about 2 minutes total). Once it cools, slice it into thin strips. 6. Add the sesame seeds to a small dry skillet and toast them, stirring constantly, for about 1-2 minutes. 7. Wash and dry the lettuce leaves ahead of time. Lay a leaf on each plate, mound the salad on top, and garnish with the omelet strips and toasted sesame seeds. Gorgeous! Enjoy!
