Soak the beans in advance. This is best done in the evening.
Put a saucepan with 3 glasses of water on the fire, add salt and boil.
Add butter to the pan and heat it up. Put the onion in the pan and fry it until it blushes.
Put the soaked beans in boiling water and, bringing to a boil, cook for 20-25 minutes. Then add diced potatoes and carrots to the beans. Continue cooking for another 35-40 minutes. The beans should become soft during this time.
Take another pot of water and salt. Bring it to a boil and throw tomatoes into boiling water for 30 seconds. We will catch tomatoes from boiling water and let them cool down. Now it will be possible to peel and seed them without difficulty. Cut the pulp of tomatoes into small slices.
Add slices of tomatoes to the pan with beans. We will also add peas, corn and spinach. Let the soup boil for another 5-10 minutes, add salt and pepper.
Minestrone summer is ready. It remains only to pour the soup on plates and sprinkle herbs on top and add a little olive oil.
