"Little Pig" Salad with Cheese, Corn and Ham

A festive layered salad shaped like a piggy — perfect for a holiday spread. Use any good hard cheese you like; better quality makes a real difference here. Homemade mayonnaise is ideal, but store-bought works fine too. If you want something a little lighter, thin the mayo with an equal amount of sour cream (a 1:1 mix) — that works nicely as well.

  • A holiday table always calls for a good salad, and this one is easy on the budget — simple, everyday ingredients that come together beautifully. It doesn't take long to put together, though it does need a little chilling time to let the flavors meld; after an hour or two in the fridge it turns much juicier and tastier. 1. Boil the potatoes and carrots in their skins until tender — you can cook them together in one pot. 2. Peel the carrots and potatoes and cut them into small cubes. 3. Cut the dill pickles into cubes. 4. Cut the ham into cubes about the same size as everything else. 5. Add the potatoes, carrots, pickles and ham to a large bowl. 6. Drain the canned corn and add it to the bowl. 7. Fold in the mayonnaise, season with salt, and stir to combine. 8. Cover the bowl with plastic wrap and refrigerate for 2 hours so the salad can soak up the dressing. 9. Turn the chilled salad out onto a flat platter and shape it into a rounded mound. 10. Grate the hard cheese on the fine side of a box grater and cover the salad with it. Cut little pig ears, a snout and a tail from the cooked sausage; use two olives for the eyes and a bit of carrot for the tongue. Feel free to get creative and garnish with fresh herbs.
