- You'll need potatoes boiled in their skins for this salad. You can cook them ahead of time or right as you go. 1. Scrub the potatoes well under running water and put them in a saucepan. Cover with water and bring to a boil; cook until tender, about 30 minutes from the boil, though it depends on the variety and size — sometimes less than half an hour is enough. 2. While the potatoes cook, hard-boil the eggs: put them in a small pan, cover with water, bring to a boil, and cook 5 to 6 minutes so they're firm. 3. Transfer the eggs to cold water and let them cool, then peel and cut into cubes. Take out the potatoes, let them cool, peel them thinly, and cut into small cubes — Olivier-style. 4. Drain the canned peas. Wash the cucumbers, pat them dry with paper towels, and cut into cubes. Cut the cooked sausage into pieces about the same size as everything else, reserving a couple of pieces for decorating. 5. Put all the ingredients in a large bowl and salt to taste. Add most of the mayonnaise (hold a little back) and stir. Spread the salad onto a flat serving platter and shape it into a pig's body. Coat the surface with the reserved mayonnaise.
