Cloudberry Sauce for Fish

An unusual cloudberry sauce for fish dishes! Made by this recipe, the sauce comes out very tasty, with a delicate sweet-and-sour flavor that's a lovely match for fried fish. If you prefer a tangier sauce, add a few drops of lemon juice.

    1. Sort the cloudberries, keeping only whole, ripe ones, and remove the stems. Rinse them under running water and leave them in a sieve to drain. 2. Press them through a sieve into a smooth berry purée. 3. Pour full-fat sour cream into a dish, add a spoonful of honey and some salt, and stir in the puréed cloudberries. 4. Refrigerate the sauce for a couple of hours; in that time it will meld and become even tastier.
