Split Pea Purée with Smoked Pork Ribs

A hearty dinner for your whole family! Split pea purée is a big favorite among a lot of my friends, and lately I've gotten hooked on it, too. It happened after I first tried making it with smoked ribs. The dish was a hit not just with me but with my husband, who never tires of bragging about my cooking to his buddies. Give it a try — it really is delicious!

    1. Rinse the peas thoroughly, changing the water a couple of times until all the grit and dust is gone. Cover the clean peas with water and let them soak for an hour.
    1. Transfer the swollen peas to a pot and cover with warm water. Bring to a boil over high heat, then lower the heat and simmer the peas for about 40 minutes.
    1. Don't waste that time — while the purée cooks, make the sauté: peel and wash the onion and carrots. Grate the carrots and cut the onion into small dice. Sauté the vegetables in vegetable oil until soft, then stir them into the peas.
    1. Season with salt and pepper, take the pot off the heat, and purée until smooth with an immersion blender.
    1. Chop the smoked ribs into small pieces and add some to each serving at the table.
  • Garnish the dish with a sprig of dill.
