Monomakh's Cap Salad with Beef

No holiday table is complete without this salad! My family asks me to make it for every celebration. It's not hard to put together — the longest part is just waiting for the salad to soak and set. It disappears in a flash, so make plenty right from the start!

    1. Start by putting the beef on to boil, since it takes the longest to cook. 2. Wash the vegetables, cover with cold water, and cook over low heat. Leave the tails on the beets and carrots so they don't bleed out their juices while boiling. Hard-boil the eggs in a small pot. 3. Cool the cooked beef and cut it into strips. Peel the vegetables and grate them, keeping each on its own plate. 4. Start assembling the salad, laying everything down in layers and brushing each layer with mayonnaise. Try to shape the salad into a cap. Layer in this order: boiled beef first, then potatoes, eggs, grated cheese, beet, and carrots. Coat with mayonnaise and garnish with walnuts and pomegranate seeds. Chill the salad in the refrigerator for about 8 hours, or overnight, to let it set.
