Semolina Porridge Made with Water and Jam (No Milk)

Semolina porridge made with water can be absolutely delicious! The first time I tried semolina cooked in water, I was genuinely surprised. The porridge was so tender and tasty that I wanted to make a batch at home. Without a second thought, I gave it a go, and the result was a hit with the whole family — now we almost always make our semolina with water (or half water, half milk). For a little variety, I add a favorite jam or preserves when serving. So good!

    1. Pour the water into a heavy-bottomed pot and set it over the heat.
    1. When the water comes to a boil, add the semolina with one hand while stirring the porridge constantly with the other. (Semolina loves to clump, and that tendency triples when you cook it in water, so I really recommend adding the grain to the boiling water slowly — ideally in a thin stream — while whisking the porridge the whole time.)
    1. Cook the semolina over low heat for 4–5 minutes, then add the sugar, a pinch of salt, and a pat of butter, and stir.
  • Add jam to each bowl to taste.
