Potato Dumplings with Plums

Make them once and you'll make them again and again. An unusual Serbian dish with plums and potato, a bit like fruit-filled dumplings.

    1. Boil the potatoes, mash them, and let them cool. 2. Add the eggs, flour, and salt to the mashed potatoes and knead into a dough. 3. On a floured surface, roll out the potato dough and cut thick rounds with a glass. 4. Place half a plum on each round and sprinkle with sugar and cinnamon. 5. With wet hands, roll each round into a ball around the plum. 6. Drop the balls into gently simmering salted water; once they float, cook for 2 more minutes and lift them out with a slotted spoon. 7. Toast the breadcrumbs in butter and pour them over the dumplings — or roll the dumplings in the crumbs and pan-fry them lightly in butter. 8. Serve dusted with sugar and cinnamon.
