Durian Ice Cream

  • Remove the durian seeds and blend the flesh until it turns into a smooth paste. Chill it. Beat the yolks with the sugar and vanilla until smooth. Bring the cream and milk to a boil, then immediately turn the heat down to low. Gradually pour this hot milk into the yolk mixture, stirring constantly and taking care not to let it foam or curdle. Chill this mixture in the refrigerator as well. Combine the two chilled mixtures and stir. And there you have it — ice cream made with an exotic fruit, durian.
