Pea Purée Soup with Chicken

A puréed soup is a delicious find for a family dinner! This was my first time making one, and a chance to test out a new blender. The soup turned out truly tasty, fragrant, and hearty (for some reason it reminded my husband of school lunches). I used split peas — they don't need soaking and cook down quickly.

Cooking method

    Start by prepping your ingredients. Peel the onion, carrots, and potatoes and rinse them well.

    Rinse the peas and add them to a pot along with the chicken breast and salt. Pour in water and set the pot over medium heat.

    Meanwhile, finely chop the onion.

    Grate the carrots.

    Once the soup comes to a boil, lower the heat and skim the foam off the surface. Add the carrots and onion to the pot. Cook until the peas are tender — it took me 40 minutes.

    Dice the potatoes.

    Take the cooked chicken breast out of the soup and add the diced potatoes and ground black pepper in its place. Cook until the potatoes are tender. Remove the pot from the heat and let the soup cool.

    Once the soup has cooled to about 105°F (40°C) — a safe temperature for blending — purée it. Use an immersion blender with a small blade. The purée should be thick enough that pieces of meat set on top won't sink in, but looser than porridge.

    Cut the cooled chicken breast into pieces.

    Make croutons from the bread by frying the pieces in sunflower oil until golden.

    All that's left is to reheat the puréed soup and ladle it into bowls. Add pieces of chicken to each bowl. Serve the soup with the croutons on the side. Enjoy!
