Snowdrift Salad with Chicken, Potato, and Bell Pepper

A salad with a wintry name is sure to be a hit on the summer table — hearty and very tasty. Many people have noticed that a winter theme feels just right in summer; when it's hot, you crave something cool. The salad is built in several layers. I used chicken in my version, but you could make it with fish instead. If you can find a mushroom-flavored mayonnaise, use it — otherwise a few sautéed mushrooms won't go amiss in the salad.

Cooking method

    Prep the ingredients: pick the boiled chicken off the bones and chop it very finely.

    Seed the bell pepper and chop it finely; wash and chop the herbs. Combine the herbs and pepper. You can add a little salt.

    Hard-boil the eggs, peel them, and cut them in half. Set the whites aside — we'll need them as whole halves — and mash the yolks.

    Grate the cheese, using whatever grater size you prefer.

    Peel the boiled potatoes, chop them finely, and spread them as the bottom layer. You can add a little salt.

    Spread the layer with mayonnaise.

    Add a layer of chicken. Don't use all of it — set about a quarter aside in a separate bowl to make the filling for the egg whites.

    Spread the herbs and pepper over the chicken. Coat this layer with mayonnaise.

    Sprinkle on some of the cheese.

    Scatter the mashed yolks on top. Divide the yolks too — add a third to the reserved chicken for the filling.

    Mix the reserved chicken, egg yolks, and a tablespoon of mayonnaise.

    Stuff the egg-white halves with this mixture.

    Arrange the stuffed egg whites as the top layer.

    Cover the salad with the remaining mayonnaise and sprinkle with cheese.

    You end up with a wintry crust full of snowdrifts. Decorate with sprigs of dill, which look just like little spruce branches. It makes quite a winter scene — snow, fir branches, and a soft sun rising over the drifts.
