Pumpkin, Tomato, and Seafood Purée Soup

A fantastically light, quick soup for everyone! This purée of pumpkin, tomato, shrimp, mussels, and squid is a real treat for the whole family. You can serve it cold or hot, and use the seafood in any combination you like. Adjust the heat to suit your mood. It takes just 10–15 minutes to make — the most time-consuming part is peeling the pumpkin!   • Peel the pumpkin, cut it into small pieces, cover with water (or broth, if you like), and bring to a boil. If you have stems left over from fresh herbs and spices, you can blanch the pumpkin along with them. When the pumpkin is nearly done, add the tomatoes to the pot. If you're using fresh tomatoes, peel them however you find easiest, dice them, and drop them into the boiling pumpkin. Bring back to a boil and cook together for about 3 minutes. Take off the heat, remove the herb stems, and blend smooth. While the pumpkin cooks, prep the seafood. I used frozen squid rings, peeled shrimp, and mussels — I thawed them in the microwave and cooked them there too. Cut the squid into pieces. Combine the blended pumpkin and tomato with the seafood, then add the citric acid, salt, pepper, finely chopped herbs, and pressed garlic. Bring to a boil. Serve cold or hot with plain yogurt or sour cream.
