- Put the fish and onion in a pot, add salt, and cook for 1–1.5 hours. Once done, lift out the heads and tails, pick off the meat, and strain the broth. Add the potatoes and semolina and cook until the potatoes are tender. Return the fish meat to the pot. Drop in a bay leaf 5 minutes before the end. Sprinkle with fresh herbs to taste just before serving.
