Vegetarian Tofu Okroshka

A great vegetarian version of everyone's favorite okroshka (a cold summer soup)! All the ingredients are plant-based and go together well. This lean okroshka comes out lighter than the usual kind — for one thing, it has no eggs or meat, so it works even for strict vegetarians. I've tried it out on family and friends, and everyone's a fan. It comes out exceptionally tasty — even better than regular okroshka. The one catch is tracking down a good soy mayo. These days it's the only okroshka we make :)
