Shrimp and Bell Pepper on Pineapple

A recipe for special occasions! Simple, exotic, and incredibly delicious! Shrimp with pineapple like this makes a great appetizer for any festive table. It's an extremely light dish — very tasty, very delicate, and wonderful. It also pairs really well with drinks. I spotted the recipe in a newspaper about a year ago; I've made it often ever since and passed it along to all my friends.

  • First, boil the frozen shrimp in boiling salted water — this takes about a minute and a half to two minutes. Then drain them in a colander and let them dry. Peel off the shells. Cut the canned pineapple into small pieces, and slice the sweet pepper into thin strips or half-rings. In a skillet with olive oil, sauté the peeled shrimp, then add the bell pepper and pineapple. Stir, and press the garlic in through a garlic press; stir again. Separately, mix the soy sauce with the apple cider vinegar — use soy sauce to taste (I add just a teaspoon) — and pour this mixture in at the very end of cooking. Season with black pepper and, if needed, salt. By the way, shrimp with pineapple can also be served with vegetable sides.
