  • I love making all kinds of dishes with squid, and salads turn out especially well. A friend recently shared this recipe for squid salad with mushrooms and ham, and it came out wonderfully unusual and tasty. Rinse the squid thoroughly, remove the quill, and peel off the skin under running water. Drop them into salted boiling water and cook for 5 minutes—watch them closely, because overcooked squid turns rubbery. Let the squid cool and cut it into strips. Wash, peel, and coarsely grate the fresh carrot. Slice the onion into thin strips. Sauté the carrot and onion in a skillet with hot olive oil until tender. Cut the marinated mushrooms and ham into strips. Combine all the salad ingredients and add the canned beans, drained of their liquid. The squid salad with mushrooms and ham is ready. Just before serving, dress it with mayonnaise to taste. Enjoy!
