  • This Thai-style shrimp salad is delicious, light, and very quick and easy to make. A friend gave me the recipe after a visit to a Thai restaurant; she tracked down the exact version afterward from a neighbor who's also a fan of bold, spicy flavors.
  • To make it, peel the cucumber and cut it into cubes. Grate the cheese on the fine side of a box grater, and rinse and finely chop the fresh herbs. Toss the salad with mayonnaise, add the shrimp, and season with spices to taste. And that's it—your Thai-style salad is ready!
  • The whole thing comes together in about 15–20 minutes. It's best to divide the finished salad between two bowls (one per serving) and serve alongside meat dishes.
