Chicken and Cauliflower Salad

A hearty, filling salad that can easily stand in for a main course! You can make this one for company, but it's really more of an everyday dish — the ingredients are always on hand, and it turns out both tasty and good for you.

    Start with the chicken. You won't need a whole one for this salad — half is plenty. Boil it until done, pull the meat off the bones, and cut it into pieces. I like to cut everything into big pieces, which looks a lot nicer.

    The cauliflower needs to be cooked in salted water too. This takes me about fifteen minutes — just watch that you don't overcook it, or it'll go mushy and lose both its look and its flavor. Break it into small florets.

    Take a pretty serving bowl or plate and toss all the ingredients together. Season with salt and pepper to taste, drizzle the sour cream dressing over the top, and sprinkle with green onion and dill. For a nice touch, you can scatter some green peas on top too.

  • You can make this salad with any other lean meat — rabbit, veal, turkey, or various game work well.
