- This heavenly, one-of-a-kind treat will win over absolutely everyone! The base of these dumplings is cottage cheese. Press it through a sieve, and add a little vanilla for a lovely aroma if you like. Take 4 of the eggs and beat them thoroughly. The butter should be at room temperature. Mix the cottage cheese, butter, and eggs together, then add the sugar and 2–3 tablespoons of breadcrumbs. Divide the mixture into exactly 24 rounds :) (or however many you end up with, of course!). Now rinse and hull the strawberries. Dust a board with a little flour. Place a strawberry in the center of each of the 24 rounds and roll them into neat little balls. Beat the remaining fifth egg in a separate bowl. Then, using a spoon, dip each cheese ball into the beaten egg and coat it in breadcrumbs. Chill the 24 balls in the refrigerator. Meanwhile, bring the water to a boil and add 1 tablespoon of sugar and the mint. Take the dumplings out of the fridge and gently lower them into the boiling water. The dumplings are done when they float to the surface. I recommend serving them with a sauce of sour cream, strawberries, and sugar.
