Cooking method
1. Wash the beef tenderloin under running water and wipe dry with paper towels. Then put it on a cutting board and cut into small strips. Transfer to a deep bowl.
2. In a separate container, soy sauce, 1/4 part of odorless vegetable oil, rice vinegar, sesame oil and a little brown sugar. Pour in a little dry sherry and put corn starch. Then mix well and beat the whole mixture with a hand whisk until the starch and sugar completely dissolve in the liquid. Pour part of the mixture into a bowl with chopped beef and mix well, covering all the pieces. Leave part of the mixture for the final stage of cooking.
3. Prepare all other products. Peel onions, carrots and garlic, rinse and dry. Then cut the onion into half rings, carrots into circles, and finely chop the garlic with a sharp knife. Peel the celery stalk from the leaves, rinse and chop. Ginger is also cleaned, rinsed and grated on a coarse grater.
4. Heat a large frying pan with a thick bottom and add 1/4 vegetable oil. Then put the pieces of beef on it in one layer. If all the meat does not fit in the pan in one layer, then you should cook it two or three times. Fry a portion of meat on maximum heat for one minute until golden brown and transfer to a plate. Lay out the next portion of beef and also fry it, and then set aside.
5. Add 1/4 of the vegetable oil again and toss the chopped onions and carrots into the pan. Fry the vegetables on all sides for a couple of minutes and put them on a plate.
6. Pour the remaining vegetable oil into the pan and put the celery stalk, ginger and garlic. Fry on medium heat for about half a minute and pour in some clean drinking water.
7. Return the fried beef and vegetables back to the pan. Mix all the ingredients together.
8. Beat the remaining beef seasoning mixture again and pour it into the pan. Cook the dish until the meat is completely cooked and the sauce thickens.
Serve fried meat with vegetables in hot form, garnished with celery leaves on top. As a side dish, you can boil rice.
