Fried Mackerel

Fried fish with a golden crust and soft, juicy flesh! Fried mackerel comes out every bit as tasty as the baked or smoked kind, with one big advantage: it's much faster to fry than to smoke. It's best to fry it uncovered so the fish doesn't fall apart.

    1. Make the marinade: squeeze the juice from the lemon, peel and press the garlic, and combine it with the lemon juice. Put the juniper berries in a mortar along with the peppercorns and caraway seeds, grind everything thoroughly with the pestle, then stir the mix into the lemon-garlic mixture.
    1. Cut the fish into pieces, salt them, and let them sit for half an hour. Then rub each piece generously with the marinade and leave for another hour.
    1. Pour the flour onto a flat plate, dredge each piece on all sides, and fry in well-heated sunflower oil until nicely golden.
  • Serve hot, garnished with herbs if you like.
