Fried Pattypan Squash in Garlic Batter
Tasty, juicy pattypan squash with a crispy crust — quick and easy! I absolutely love pattypan squash and have a whole collection of fun ways to cook it. This recipe is one of my favorites — I just tweaked it a little by adding garlic. The squash comes out delicious: fragrant and juicy, with a golden crust. And it's a breeze to make.

- Start by stirring the flour and curry powder together in a bowl. In a separate bowl, crack the eggs, add salt, and whisk. Wash the squash and peel it — though if they're young and the skin pierces easily, you can leave it on. Cut the squash into slices about 1/2 inch (1 cm) thick. Set a skillet on the stove and heat the oil in it. Dip each squash slice in the egg, then dredge it in flour, and fry on both sides until golden. Serve the squash garnished with fresh herbs. At this point I crush the garlic in a garlic press, mix it with a little boiled water (1–2 tsp is enough), and drizzle it over the squash. Or you can do it another way — spread the fried squash on a wide platter and simply squeeze the garlic over the top.
