Chinese Salt-and-Pepper Smashed Potatoes (Jiaoyan Xiao Tudou)

This dish is simply gorgeous, and it wins you over from the very first bite. While exploring China and its cooking, I came across this recipe for boiled potatoes. I couldn't resist and headed to the supermarket for fresh ones — I picked out evenly sized potatoes and gave it a go. I'll say up front that I used a little less spice and added some hot chili flakes, and I swapped the peanut oil for a good olive oil, which I was very happy with! You can serve these potatoes as a side for meat or fish, or eat them as a main. I had them as a main — divine!

    1. Add all the spices, the sugar, and the salt, and grind them together with the pestle. The cumin should be ground to a powder. Finely chop the green onion.

    1. Once the potatoes are cooked, drain them and let them cool a little in a colander.

    1. Put them on a cutting board and gently flatten each one with the flat side of a knife. This makes them easier to fry and to season.

    1. Pour olive oil into a heavy-bottomed skillet or wok and set it over high heat. Add the potatoes.

    1. When one side is golden, flip the potatoes and sprinkle with the seasoning.
