  • Apple salad with canned herring is one of those dishes that's simple to make but dresses up any festive table. The recipe was passed to me by a friend who loves to eat well but really dislikes spending a long time over the stove. I drain the liquid from the can into a separate container and carefully arrange the fish in an oval salad bowl so as not to break up the pieces. I grate the washed, peeled apple on a coarse grater, then peel, wash, and very finely chop the onion. I mix the onion and apple, season with sugar, salt, and vinegar, and add the liquid from the can. There's your salad dressing! I pour it over the salad and garnish with chopped herbs. It's hard to think of anything simpler or tastier, at least in the few minutes it takes to make. Sometimes, instead of canned herring, I use cleaned herring fillets or pieces of herring of the kind sold in all sorts of marinades. That's also very tasty and adds a lot of variety to the diet.
