Kohlrabi Salad without Mayonnaise
A charming, low-calorie dish with a magical aftertaste. I'd never eaten kohlrabi, and then I got the urge to try it. Kohlrabi is a kind of cabbage that's been known in Europe since the 16th century. The bulb forms on the stem, which is why kohlrabi is called a stem cabbage. You can eat it raw, or stew, boil, and fry it. I decided to make a kohlrabi salad.

Cooking method
- For this I used a grater that shreds vegetables the way you'd cut them for Korean-style carrots. Peel and grate the kohlrabi. To it I add ginger grated on a fine grater and hulled white sesame seeds. In go the sugar, tarragon (or a teaspoon of fresh chopped tarragon instead), pepper, balsamic vinegar, and rice bran oil. I'd especially like to highlight the rice bran oil here. Try it once and it'll become an indispensable helper in your kitchen for all kinds of dishes. It's as good for you as olive oil and has a wonderful flavor. Enjoy!
