Fresh Vegetable Salad

The taste of summer! A very appetizing salad for special guests! A very light summer salad. The idea for this fresh vegetable salad with an original dressing came out of lots of experiments with spices. I think it's a dish you can serve to guests without a second thought.

  • First, make the salad dressing. Mix together the chopped shallots, grated ginger root, crushed garlic clove, ketchup, rice vinegar, soy sauce, vegetable oil, and water. Stir the dressing ingredients until you get a smooth sauce. Seed the red pepper, cut it into thin strips, and drop them into ice water. Keep the pepper pieces in the water until they curl. Put the lettuce leaves in a salad bowl, add 4–6 tablespoons of dressing and the sea salt, and toss. Divide the salad among plates and top with cherry tomato halves, thinly sliced cucumber, and strips of bell pepper. Enjoy!
