Syrniki (Cottage Cheese Pancakes) Without Semolina
Simple, fast, and delicious — perfect for breakfast! These syrniki (cottage cheese pancakes) skip the semolina and take next to no time, so you can whip them up for breakfast or an afternoon snack. You can make the cheese dough ahead of time and fry the pancakes as you need them.
Cooking method
-
Step 1:
How do you make syrniki without semolina in a frying pan? Gather the ingredients you'll need. Choose cottage cheese that's soft but not too wet — the less moisture in the cheese, the less flour you'll need. Sweeten to your own taste.
-
Step 2:
Put the cottage cheese in a deep bowl. For a smooth texture, you can press it through a sieve or blitz it with an immersion blender. I just mashed the biggest lumps with a fork — the cheese was very soft, so it took no effort at all. Crack in the egg and add the sugar, then mix it all together.
-
Step 3:
The egg and sugar should be evenly distributed throughout the cottage cheese.
-
Step 4:
Gradually add the flour and work it into a dough. You may need a little more or less than the recipe calls for — go by the texture of the finished cheese dough. The amount of flour depends on the consistency and moisture of the cottage cheese.
-
Step 5:
The cheese mixture comes out very thick and holds its shape well. Add a pinch of vanilla for aroma.
-
Step 6:
With damp hands, shape small patties and roll them in flour on all sides.
-
Step 7:
To fry, heat the pan until hot and add a little vegetable oil. Lay in the patties and fry over low heat for 3–4 minutes per side.
-
Step 8:
The syrniki turn a gorgeous golden color and hold their shape beautifully.
-
Step 9:
Transfer the finished syrniki to a plate lined with paper towels to soak up any excess oil. Serve them with your favorite jam, sour cream, or condensed milk. Enjoy!
- Important! For the cheese dough or filling to turn out well, choose your cottage cheese carefully. A poor-quality product can ruin the results, since it directly affects the texture, flavor, and final outcome. Read how to pick the right cottage cheese for dough or filling in this article.
- How do you tell if an egg is fresh? Crack it into a separate container. First, there should be no off smell. The white of a fresh egg will be clear and clean. The yolk shouldn't spread out — it should be glossy, domed, and uniform.
