Greek Salad with Trout and Fetaxa Cheese

To make the dressing, take a small bowl and add one-third teaspoon of a black-and-red pepper blend, one-third teaspoon of khmeli-suneli, and one tablespoon of dried parsley, basil, and dill; then add two garlic cloves put through a press.

Pour forty milliliters of soy sauce and forty milliliters of olive oil into the bowl of spices.

Squeeze in the juice of half a lemon.

Add two or three tablespoons of brine from the olives to the bowl and mix all the ingredients together well.

Rinse fifty to sixty grams of lettuce leaves well, blot them with paper towels, and tear them into large pieces, then spread them on a large plate in an even layer. Next, cut one medium cucumber into fairly large pieces and lay it on top of the lettuce.

Cut two tomatoes into large pieces and add them to the plate, then cut half a bell pepper into medium pieces, add it to the rest of the vegetables, and spread it out evenly.

Add fifteen olives to the plate, then one hundred grams of Fetaxa cheese cut into medium cubes.

Cut two hundred grams of fresh dry-cured trout into medium pieces — you can swap it for any other red fish if you like — then spread it over the plate in an even layer.

Generously drizzle the assembled salad with the dressing you made earlier.
