An original, unusual, savory-sweet dish for a special occasion! This pear and dor blue cheese salad leans almost dessert-like, with plenty of sweet ingredients — pear, caramelized nuts, and honey. But the tangy dressing and the blue cheese add a really interesting note.

    How do you make a pear and dor blue cheese salad? Prep the ingredients. For the base, use any fresh greens — I used a mix of leaf lettuce and arugula. Choose a large, juicy, ripe pear. The blue-veined dor blue can be swapped for sharper cheeses like Roquefort or Gorgonzola, or milder white-mold cheeses like Brie or Camembert.

    In a preheated dry skillet, toast the walnuts, stirring, for 5 minutes.

    Pour the honey into the skillet and cook the nuts over medium heat, stirring constantly, until caramelized. Use good-quality natural honey; if it's thick or crystallized, melt it first over a water bath.

    Remove the stem and core from the pear. Cut the flesh into thin slices. Squeeze the juice of half a lemon over the pear so it doesn't brown.

    Get the dressing ready. Any vegetable oil works — I used olive oil. You can use ready-made Dijon in place of the grainy mustard, and lemon juice in place of the vinegar.

    Wash and thoroughly dry the arugula and lettuce. In a salad bowl, layer the greens, pear slices, and blue cheese.

    Scatter the caramelized walnuts on top. Drizzle the dressing over the salad, toss gently, and serve. Enjoy!

  • Make this salad right before serving — if it sits, the pear releases juice and the greens wilt. Same with the dressing: add it just before eating.
  • Since everyone's preferred level of salt, sweetness, bitterness, heat, acidity, and spice is different, always adjust the seasonings to your own taste. If you're using a spice for the first time, keep in mind that some are easy to overdo (chili pepper, for example).
