Classic Caesar Salad with Shrimp
Ridiculously good, quick to throw together, festive, and bright! This classic Caesar salad with shrimp is perfect for a romantic dinner over a bottle of white wine. It's light yet satisfying, and it comes together in just minutes. Make it whenever you want to treat the people you love.

Step 1:
How do you make a classic Caesar salad with shrimp? First, gather all the ingredients on the list. Tiger or jumbo shrimp are best for this salad, but regular shrimp are just as tasty. Which lettuce should you use? The classic version calls for romaine, but you can also use Boston lettuce, endive, iceberg, or napa cabbage. Rinse the tomatoes, lemon, and lettuce in clean water and pat them dry.

Take the shrimp out of the freezer and thaw them at room temperature. To speed things up, you can cover them with cool water. Peel off the shells and remove the heads; leave the tails on or take them off — it's up to you.

There are two ways to cook the shrimp: boil them in water until done, or marinate and pan-fry them. I usually go with the second method — the salad tastes richer that way. Put the shrimp in a small deep bowl and add 1 tablespoon lemon juice, 2 tablespoons vegetable or olive oil, and a pinch of salt. If you have Worcestershire sauce, add that too. Let it sit for 10 minutes.

Fry the shrimp in a hot skillet for a couple of minutes on one side.

Then the same on the other side.

Cut the crusts off the white bread (a baguette works well). Cut the bread into small 1–2 cm cubes and fry them in a little olive or vegetable oil. If you like, toss in a bit of garlic to make the croutons extra fragrant.

Spread the croutons on a baking sheet and pop them into a preheated oven for 5–10 minutes to crisp up.

Cover the eggs with cold water and set them on the stove. Once the water boils, lower the heat slightly and cook the eggs for one minute — they should be soft-boiled. You'll only need the yolks for the dressing.

Make the dressing. Put two yolks, the mustard, 2 tablespoons lemon juice, the balsamic vinegar, 4 tablespoons olive or vegetable oil, the garlic, salt, sugar, and ground black pepper into a blender.

Blend everything until smooth.

Now assemble the salad. Tear the lettuce into rough pieces by hand and spread it as the first layer on a flat plate.

Next come the croutons and cherry tomatoes. Cut the tomatoes in half or into quarters.

Lay the shrimp on top as the next layer.

Drizzle the dressing evenly over the salad.

And add cheese grated on the fine side of a grater.

If you like, scatter a few more croutons on top and garnish with fresh herbs. Your Caesar is ready — serve it right away!
