Grilled Squid with Ginger, Garlic, and Syrup Glaze

    1. Separate the squid's head and tentacles from the body. To do this, gently press with the edge of a fork or spoon at the base of the head, then pull on the head to draw out the innards. Scrape away any remaining innards with a spoon. The body should be completely hollow and clean. 2. Now cut the innards away from the head and tentacles. Cut open the head and remove the eyes. Sprinkle the tentacles with salt and scrub them, as if with an exfoliant, to remove any dirt and grit from the suckers. 3. Rinse the body, head, and tentacles under cold running water until they feel slippery. Now peel off the thin membrane: catch an edge and pull it off the body like a stocking. It helps to dip your fingers in salt for a better grip. 4. Place the cleaned squid and tentacles on a cutting board. Lay a wooden skewer alongside each side of the body. Using a sharp knife, score cuts all over the body — the skewers keep you from slicing all the way through, so you only make deep scores. 5. Peel the garlic and press it. Put the garlic paste in a bowl. Add the ground ginger, chili sauce, and mustard, then pour in the rice syrup and soy sauce. Mix everything well until it becomes a smooth paste. 6. Heat a grill pan over medium heat and add the vegetable oil. Place the squid body scored-side up, and add the head and tentacles as well. Cook for 1 minute, until the underside is firm and opaque. 7. Using tongs, flip the squid and cook for another minute, straightening the body with the same tongs. Brush the squid with the sauce and cook for 2 minutes. 8. Flip again and brush this side generously with sauce too. Cook for 1 more minute. The squid should turn glossy. Serve hot. Enjoy!
