It always comes out light and airy and holds its shape beautifully. Any pastry maker will love it, since it works not only for cakes but also for filling doughnuts and decorating pastries. And it's delicious as a stand-alone dessert, too.

  • To make this versatile creamy curd cheese frosting, beat the softened butter with the sugar using a blender. If you don't have a blender, no problem — a mixer will handle the job just as well. In that case, just push the curd cheese through a sieve carefully to keep any grains out of the finished frosting. Once the butter mixture turns white, add the cream and keep whipping until fluffy, about 3–4 minutes. Add the soft, medium-fat curd cheese to the frosting. If the curd cheese is dry, you can adjust the texture with cream, adding about 100 grams more. Whip the frosting, keeping a close eye on the consistency — there should be no grains; it should be perfectly smooth and uniform. That's it, your wonderful frosting is ready. Use it to finish your culinary masterpieces, or top it with strawberries and treat your family and friends!
