Amaranth Flatbreads
A traditional Indian flatbread — and not hard to make! Amaranth flatbreads are delicious and super good for you. Amaranth is rich in protein and iron and a good source of magnesium and zinc — and best of all, it's gluten-free. These flatbreads are traditionally baked in India. Served with homemade ghee, they simply melt in your mouth. Chili adds heat, and cumin lends a special aromatic note.

- They say these flatbreads help build a family's well-being and prosperity and bring harmony. Whether that's really true is anyone's guess, but one thing is certain: amaranth flatbreads are good for your health, because they're so nutritious.
- These flatbreads aren't traditional only to India, by the way. Our ancestors made them too — just without the chili and ginger. But we'll add those ingredients for a brighter-tasting homemade bread.
- Put the amaranth flour in a large bowl. If you only have the seeds and no flour, grind them into flour yourself — a coffee grinder works well. 2. Add the ginger paste to the flour. Ginger paste is a popular condiment in India. If you don't have it ready-made, it's easy to make: mince some ginger, add a little vegetable oil and salt to taste, and that's it. 3. Add the chopped chili to the flour and paste. 4. Add the cumin seeds and salt and mix everything together. Knead a stiff dough, adding water a little at a time. The dough should not be soft — it'll be fairly hard to knead. Don't add much water, just a bit at a time. 5. Divide the finished dough into three equal parts and shape each into a ball. Roll each ball out into a flat round, then press dents into the surface with the handle of a rolling pin and make cuts with a knife. 6. Heat a cast-iron skillet — dry, with no oil. Lay the first flatbread cut-and-dented side down and cook until browned. Then flip and cook the other side the same way, until browned. 7. Repeat with the other two flatbreads. Serve the flatbreads warm with ghee, your favorite sauces, and fresh vegetables. Enjoy, and good health!
