Charcoal-Grilled Nutria Kebabs

Cook up something unusual for a get-together with friends! When cookout season rolls around, kebabs are a must. Here's a way to switch up the usual chicken and pork with nutria. It comes out really tasty! Nutria, by the way, is very tender and mild — and it stays that way even after grilling over coals.

  • Break down the carcass and trim off the excess fat. Cut it into chunks and put them in a bowl. Add the finely chopped chili, the garlic pushed through a press, the finely chopped herbs, and the sugar and salt. Pour in the olive oil and lemon juice and mix thoroughly. Let the nutria marinate for 30 to 60 minutes — no longer, since the meat is tender enough as is. Then thread the pieces onto skewers and grill on all sides over hot coals. Take care not to overcook it, since it burns easily. Pull the meat off the heat when the juices run just faintly pink when you pierce it. Put the meat in a large bowl, cover, and let it rest for 10–15 minutes to finish. Have a great time!
