Quesadilla with vegetables

A variant of an appetizing Mexican quesadilla without meat! Try! If you are a fan of Mexican cuisine, like, for example, my husband and I, I suggest you cook this bright and delicious, but at the same time simple dish yourself. This version of quesadillas with vegetables, and therefore suitable for vegetarians.

To prepare this colorful dish, you need:

1. Rinse the beans from the jar from the marinade and dry.
2. Cut half of the tomato into cubes, put it to the beans.
3. Cut the Bulgarian pepper into strips.
4. Finely chop the parsley leaves, put them together with the Bulgarian pepper to the vegetables.
5. Cut the onion into quarters of rings and lightly fry in a frying pan with oil.
6. Put the vegetables with parsley in a frying pan and fry until the tomatoes are soft. Add salt and pepper.
7. Grate the cheese on a fine grater.
8. Place a tortilla on the bottom of a warming dry frying pan and sprinkle it over the entire area with grated cheese.
9. When the cheese melts, put the filling on half of the tortilla and season with hot sauce, and wrap the other half over the filling and press the quesadilla with a spatula over the entire area.
10. Fry the quesadilla on one side over medium-high heat, then turn it over and fry the tortilla on the other until golden.
