Vegetable Sauté with Cuttlefish and Seafood

A bright, tasty, good-looking vegetable dish with seafood. Make it! What sets a sauté apart is that the ingredients—always vegetables, plus meat (poultry, seafood, mushrooms)—are cooked over high heat in a little oil while you keep them moving (stirring or tossing).     1. Wash the zucchini and cut it into strips. Clean the mushrooms and cut them into 4 wedges lengthwise. Cut the tomato into wedges. 2. Remove the skin and quill from the squid bodies and cut them into large pieces however is easiest. Clean and cut the other seafood as needed into pieces about the size of the squid. 3. Heat the oil in a skillet and stir-fry the mushrooms and zucchini, then add the tomato. Cook a couple of minutes, add the ground red pepper and a little soy sauce, and after about 20 seconds move the vegetables to a plate. 4. Right away, add the seafood to the skillet. Cook over high heat for a minute, then drain off the liquid that releases. 5. Cook the seafood a couple more minutes, then add the vegetables back and toss. Add soy sauce and, about 30 seconds after it comes to a boil, stir in the chopped garlic, toss, and turn off the heat. The dish is ready. Enjoy!
